Details of Innovation Babubhai Popatbhai Pansuria has large functions such as weddings in mind. Accordingly, he manufactures kitchenware aimed at en masse production of dishes and sweetmeats. His nnovations include the dhokla and laddu makers. At public or marriage functions, laddu is a delicacy. To make it, Bengal gram (chana) flour has to be fried at low heat and then powdered because it hardens in the process. Being a bit hot, it is difficult to break the flour mound with hands or wooden sticks, and it is time-consuming. So, one-horse power machine has been developed for the purpose. It costs Rs.3,000. The same goes for dhokla-making. The laddu and dhokla-maker is a sell-out at big functions. Since its manufacture 10 years ago, the machine has been a hot commodity with caterers who deal in bulk orders such as marriage and public functions.
